The ingredients you need to make Sambar rice are – one cup rice, half cup arhar dal, water as required, one teaspoon sesame oil, salt to taste, half tablespoon of tamarind, onion sliced into thick slices, some curry leaves, half cup tomato, one and a half cup of vegetables chopped, turmeric powder, Kashmiri red chili powder, sambar powder, ghee, mustard seeds and asafetida.
You have to rinse the rice and dal together a few times then put it into the pressure cooker. Then you have to add some salt to taste, one teaspoon sesame oil and water as required. Cook it in pressure for quarter an hour and leave it to settle down. You have to soak the tamarind in hot water.
Then for the vegetables, heat some sesame oil in a pan and add the onions to it when the oil get heated. Add some curry leave and a pinch of asafetida and cook it for some time and then add the tomatoes and other vegetables to it. Let it to cook for two minutes and then add in some turmeric powder and red chili powder to it and mix. Add some water to this and some salt to taste. Cook this for near about twenty minutes with lid on. Add in the tamarind soaked water when the vegetables are almost done. Then heat some oil and add the mustard seeds to it till it crackle, add curry leaves and red chilies to it. You have to pour this mixture in the sambar rice and serve it hot. It’s a very nutritious food as well as stomach filling with a yummy taste to boot!
